Muesli Bar Slice

When I got home from the grocery shopping this morning  I was putting the sultanas away when the recipe on the back caught my eye. Muesli Bar Slice ‘Delicious’ was my first thought. ‘I don’t actually have any of those ingredients’ was my second. So here is my ad-lib attempt at muesli bars.

I used to make muesli-bars a couple of years ago which consisted mostly of condensed milk and chocolate drizzled over the top. These aren’t quite as delicious as those, but are less likely to contribute to the obesity epidemic.

Here’s the recipe. Bear in mind I just used bits and pieces of what I had.

Muesli Bar Slice

Ingredients:

1 cup of sultanas
1/2 cup of cranberries and pistachios mixed
1 cup of rolled oats
1/2 cup flour
2 tbsp of white chia seed
2 tbsp of LSA
1/4 cup shredded coconut
the grated rind of one orange
60g butter
1/4 cup of honey
2 tbsp brown sugar
1 egg

Method:

1. Mix dry ingredients

2. Melt butter, with brown sugar and honey in the microwave for 1 minute. Add egg to this mixture

3. Combine wet and dry ingredients well

4. Bake in 180 degree oven for 15 mins.

5. Cool and eat.

Sinchy. It’s not triple tested by the Women’s Weekly or anything, but it did clear out the cranberries and pistachios that I’m not sure how long have been in the pantry and made the whole house smell like Christmas. I would love to hear your muesli bar recipes.
